A Bo Ssäm party with Chae for Melbourne Food & Wine Festival

 
 

On Sunday 26th March, we threw a Bo Ssäm Party with Jun Eun Chae. Jun grew up making ferments in Korea's South Jeolla province with her mum, before refining her fine-dining skills at the likes of Lumé and Cutler & Co. Famous for starting a six seat restaurant out of her Brunswick apartment, which has now moved to Cockatoo, Chae has quickly become one of Melbourne's most sought-after Korean chefs.

It was a shared feast layered with Chae’s delicious ferments and preserves, the freshest of local produce and gently braised Berkshire pork as the centrepiece of a celebratory Korean feasting dish - Bo Ssäm. Thank you Chae - it was a delight.
