SUPERNORMAL EGG SANDWICH


Egg Salad Mix

- 150g rough chopped egg white 

- 50g cooked yolk (passed through sieve) 

- 80g mayonnaise (see recipe below)

- 20g minced spring onion

- salt & pepper to taste 

Mayonnaise Mix

- 160g Kewpie mayonnaise 

- 320g creme fraiche 

- 20g dijon 

- 40g yuzu kosho vinegar

- 40ml mirin

Method

Cook 4 eggs in simmering water for 8 minutes.
Peel eggs and separate the yolks and whites, preparing as above. 

Mix together the creme frâiche and kewpie mayonnaise 
Season with yuzu kosho vinegar, Dijon & mirin

Gently mix the chopped egg to mayonnaise mix.  

Sandwich between thick layers of Shokupan and enjoy!
